Easy Baked Chicken and Yellow Rice Recipes
Oh this recipe rocks! Easy Chicken and Yellow Rice is just that. E-A-S-Y! It uses only 5 ingredients and can be oven ready in about 5 minutes. What it lacks in ingredients, it more than makes up for in taste! This delectable main dish uses chicken and chicken broth (I used homemade). It also includes saffron rice, mushrooms and a can of cream of mushroom and chicken soup. Yes, you read that right. Campbell's makes a condensed soup that includes mushrooms and chicken. It's perfect for this recipe.

Back in October, I had some leftover rotisserie chicken I was trying to use up. as it happened I had a packet of saffron rice, a can of the mushroom-chicken soup and some leftover chicken broth in my refrigerator. The recipe turned out so well, I decided to make it again and take pictures! This time I added a can of mushrooms.
I made this the week of my garage sale. One of the nights before the sale, my neighbor was helping me with pricing and organizing items. I asked her if she was hungry. (She had come over after work). She was hungry, so I served her some of this dish. She loved it so I thought I better make it again and post to my blog.
I ended up making it the following week. I was making a meal for a gal in our neighborhood who had hip replacement surgery. I halved the meal and took half to our neighbors as well, as a thank you for all of their help with the garage sale. Anyone who comes to your house at 6 a.m. to help set up tables and organize things is a friend for life, right? I served it with Green Beans and onions (a recipe I've whipped up since early married days). I added Pear Salad Halves, Marinated Veggie Salad (which both raved over) some Rapid Rise Italian Herb Bread and a Pineapple Explosion.
Both families raved over the meal and enjoyed everything for days. 🙂 All I can say, is this is a terrific main dish recipe. It's easy to make and heats up wonderfully for leftovers. We couldn't get enough of it!

Chicken, yellow rice and mushrooms makes one extraordinary dinner entree.
Here's what I did.
I used these ingredients.
Measure yellow saffron rice into a mixing bowl. Add a can of condensed cream of chicken and mushroom soup, and a can of drained, diced mushrooms.
Stir ingredients to combine.
Add chicken broth and chicken.
Stir ingredients to combine.
Pour mixture into a greased 9×13″ baking dish. Stir ingredients so that the rice is distributed evenly throughout the casserole.
Cover casserole with foil. Bake for one hour at 350 degrees. Remove foil and fluff rice with a fork. Bake an additional 15-30 minutes or until the liquid is completely absorbed. It's possible that the casserole can be done in an hour.
Serve with your favorite side dish or salad.
Easy Chicken and Yellow Rice is so easy, it's a great recipe to use to teach your kids or grandkids how to cook.

Easy Chicken and Yellow Rice
Easy Chicken and Yellow Rice is a savory and succulent main dish your family will ask for over and over again! This delicious 5-ingredient recipe can be tossed together in under 5 minutes. It bakes in a little over an hour so it's great as a time-baked entree. It's terrific for family or company dinners because it tastes fantastic and everyone always wants seconds.
- 3 cups cooked chicken cubed
- 2 cups saffron yellow rice
- 4 to 5 cups chicken broth as desired
- 4-oz. can sliced mushrooms drained
- 10.75 oz. can Campbell's cream of chicken and mushroom soup

Combine all ingredients and place in a greased 9x13" baking dish.

Cover with foil.

Bake for one hour at 350°.

Remove foil and fluff rice with a fork.

Cook an additional 15-30 minutes or until liquid is absorbed and rice is done.
NOTE: The casserole will bake more quickly if using only 4 cups of chicken broth.
NOTE: If you cannot find Campbell's Cream of Chicken AND Mushroom soup, Cream of Chicken soup is preferred over Cream of Mushroom.
NOTE: If your oven cooks fast, this recipe may be done in an hour.
NOTE: When putting chicken mixture in baking dish, be sure to stir the rice around in the dish so it's evenly distributed.
